Jessica Prescott, author of Vegan Goodness, implores her readers to enjoy the process of cooking just as much as the final product. 72 recipes are included, each one simple to make but packed with flavor and nourishing ingredients. I found the book particularly useful on days when I am devoid of inspiration- I frequently get bored with my classic smoothie recipe, and she presents nine variations that inspire me to branch out of my comfort zone.
The colorful, tropical photography, taken by Prescott herself, is almost as enticing as the smell of a freshly made meal. Prescott’s writing is accessible; she presents substitutions for ingredients and helpful tips that have made their way into my daily routine. The book starts with a shopping list aimed at those interested in veganism- staple ingredients that can easily be transformed into a meal. Next she advises what kitchen utensils are absolutely essential, giving a rational for each one.
Prescott is not only concerned with how the recipes taste, but also with the general health of her readers. In the list of staple ingredients, she mentions pasta, then advises to “buy wholewheat. They are sooo much better for you, and once you get used to them you will feel like they are giving you a hug from the inside when you eat them.”
The recipes focus on whole, fresh ingredients with Prescott reassuring you each step of the way. In her sweetcorn fritters recipe, for example, she notes “it will seem like you don’t have enough batter. This is good.” It’s like having a chef in the kitchen with you, looking over your shoulder.
